Today’s animation is a modern cow bone butchered as part of an experimental project to understand how past butchering practices would impact various kinds of bone. The experimental project is directed by Joanne Bowman, Zooarchaeologist for the  Colonial Williamsburg Foundation (CWF), who provided this bone.
